A bold Barbera d’Asti DOCG with a strong character, produced in a limited edition for Trattoria contemporanea by the Cascina Montecantero Agricultural Company. This wine fully expresses the essence of the Asti territory, with a complex and deep profile that combines intensity and structure.
Spreadable cream
Trattoria contemporanea’s spreadable cream is an artisanal creation of Cocoah!, a small company that enhances the entire supply chain by carefully selecting raw materials. Made with few ingredients, this cream enhances the quality of the IGP Piedmont Hazelnut, the real protagonist, from a farming cooperative in the Alta Langa, which promotes a short supply chain and authentic excellence.
White Chocolate Bar
Trattoria contemporanea white chocolate is a Bean to Bar created by Cocoah!, a small artisanal company that respects the supply chain and values quality raw materials. This single-origin white chocolate from Peru is characterised by intense notes of milk and cream, with a finish of toasted and slightly caramelised flavours. The delicate sweetness leaves room for all the aromatic nuances of the natural, non-deodorised cocoa butter from the San Martin region of Peru.
Dark chocolate bar with salted caramel popcorn
Trattoria contemporanea’s salted caramel popcorn, skilfully prepared by our pastry chefs, meets Bean to Bar chocolate from Cocoah!, an artisanal workshop that enhances the entire supply chain using selected raw materials. The dark 80% single-origin Tanzania chocolate reveals fruity notes of yellow and tropical fruits, a tart touch of red fruits, and in the background hints of roasted cocoa, dried fruits and honey. The crunchy element of salted caramel popcorn adds a pleasant contrast of texture and flavour.
Salami
Trattoria contemporanea salami comes from the country tradition and is handmade by the Beccalli butcher’s shop, in our area, using top quality local pork. Bagged and processed with care, it is wrapped in ‘gentile’ gut, which preserves its softness even after prolonged maturing in the butcher’s cellar.
Cheese
Trattoria contemporanea cheese is a unique creation produced by Fattoria Dassogno, which exclusively uses its own fresh cow’s milk from cows reared in Rogeno (LC). This high quality ingredient is combined with an almond extract that gives the cheese a unique and delicate flavour. The result is a semi-hard cheese with a complex aromatic profile, enriched by crusco pepper and liquorice marbling, which give it a surprising depth of flavour. Matured for at least 60 days in the farm’s cellars, the cheese develops a perfectly balanced texture, maintaining its freshness and intensity.
